Dum Chicken Biryani



Ingredients :

2 cups Basmati Rice
2 medium sized Onions chopped finely
1 Tomato chopped finely
3 or 4 Green chilis slit open
1 tablespoon Ginger Garlic Paste
1/4 cup Mint leaves
1/4 cup Coriander leaves
1/2 cup Fresh Curd diluted with 1/2 cup water
a pinch of Turmeric Powder
1/2 teaspoon Chilli Powder
3 tablespoon Oil
4 Cloves
2" Cinnamon stick
1 Bay leaf
3 Cardamom
Salt as per taste

To Marinate :

1 Chicken cut into pieces
1/4 teaspoon Ginger Garlic Paste
1 tablespoon Curd
1 teaspoon Chilli powder
1 teaspoon Coriander powder
1/4 teaspoon Garam Masala Powder
1/2 teaspoon Salt


Method :

  • Wash chicken nd marinade it with Ginger Garlic Paste, Curd, Chilli powder, Coriander powder, Garam Masala Powder and Salt and keep it aside for 30 minutes
  • Wash and soak rice in water for atleast 30 minutes
  • Heat oil in a heavy bottomed vessel, add 4 cloves, cinnamon stick,1 bay leaf
  • Now add onion, green chilli, mint leaves, sprinkle little salt and cook for 2 minutes
  • Add ginger garlic paste and saute
  • Add tomato and cook till its soft
  • Now add the marinated chicken, chilli powder, turmeric powder and saute for 3 minutes
  • Cover the vessel and let the chicken cook for 7 minutes
  • Add 1 cup curd and 2 cups of water and salt and let it boil
  • When it comes to boil lower the flame and let it cook for 3 minutes
  • Now pressure cook the rice till its 80% cooked
  • Now add this cooked rice to the biryani masala and let it cook for a minute
  • Cover the the vessel with a clean towel or paper and place the lid on top of it and reduce the flame and let the biryani cook on DUM for 7 minutes
