Kozhikode Chicken Biriyani
Ingredients :
Chicken Marinade :
1/2 kg Chicken
1/2 cup Curd
25 gm Corianderleaves
25 gm Mintleaves
10 gm Curryleaves
1/2 tsp Cuminseeds
1 tsp Coriander seed powder
1/2 tsp Aniseed powder
25 gm Greenchillies
4 to 5 Garlic cloves
2 tsp Chopped Ginger
1/2 tsp Turmericpowder
1 tsp Lime juice
1 tsp Poppyseeds paste
For rice :
1 tbsp butter
5 - 6 pieces Cinnamon
Bay leaf - 1 no
4 - 5 nos Cardamom seeds
4 - 5 nos Curryleaves
4 - 5 nosCloves
1 no Onion (chopped)
250 gm Broken rice
1/2 litre Water
Salt - As required
Biryani masala :
2 tbsp butter
5-6 pieces Cinnamon
1 no Bay leaf
4 -5 nos Cloves seeds
1 no Nutmeg
100 gm Onions
1 no Tomato (cut into 4 pieces)
Garnishing :
1 no Boiled egg
Roasted Cashews & Raisins
Method :
Marinade the chicken with the ingredients mentioned in the chicken marinade section and let it set a side for 2 hours.
Heat butter in a pan
Add cinnamon, bay leaf, cardamom seeds, curry leaves and cloves.
Add onions and cook, till they turn Golden.
Now wash the rice and boil the rice in another vessel and cook till the rice is translucent
Add water and allow it to boil
When the water boils lower the flame and cover the pan
Cook on low flame till the rice is done
Heat butter in a pan
Add cinnamon, bay leaf, cardamom seeds, nutmeg and cloves.
Add onions and saute, till golden brown.
Add tomatoes and saute
Now add the marinated chicken
Cover the pan and cook for another 10 minutes on medium flame
Remove the cover and cook on low flame for another 10 minutes to make the gravy thick
Layer the serving bowl with alternating layers of rice and the chicken masala.
Garnish the top with a boiled egg cut in four pieces and roasted cashews and raisins
